As Autumn arrives…….

As fall arrives we will spend more time indoors with the ones we love. A great way to start to slide into winter months is by entertaining at home. There are some perfect recipes for entertaining at home whether it is an intimate dinner party or an extravagant affair. Great food and good conversation are the heart of any gathering. One of my favourite recipes includes a great souffle although, it can be quite filling but, if baked in small ramekins it can be delicious. Classic Zucchini Souffle
4 cups of shredded zucchini
1 1/4 teaspoons of salt
1 tablespoon of melted butter
4 eggs
1 teaspoon of fresh thyme, chopped
1/8 teaspoon of ground black pepper
pinch of red pepper flakes
1 cup of Montery Jack cheese
1 tablespoon of grated Parmesan
1/4 cup of all purpose biscuit baking mix
Toss the zucchini and salt together and place into a colander set it in the sick. this will allow it to drain for an hour. Squeeze the remaining liquid out of the zucchini and set aside.
Preheat the oven to 350 F. Brush six ramekins with butter. If you would like to use a regular souffle bowl you can do that also.
Whisk the eggs in a mixing bowl with the thyme,pepper,and red pepper flakes. Stir in the zucchini, Monterey Jack Cheese, Parmesan and baking mix, until combined. Pour into the prepared ramekins or souffle dish.
Bake,uncovered until set and golden on top. 20 minutes is the recommended time but, I tend to bake it for 40 instead. The souffle is done when a knife is inserted into the center and comes out clean.
